To be honest, when I sat down today to blog, I had no idea what recipes I wanted to share, but I knew I wanted to share one. So I started flipping through some of the cookbooks sitting in my inventory and saw this...a recipe for Fresh oven-baked Salmon and thought, "This is perfect! This is exactly what all of those great people who are starting the year with goals of eating better this year!" And so, with that, I share with you a recipe pulled right out of Great American Recipes Easy Everyday Cookbook. Fresh Oven-Baked Salmon
Prep time: 15 minutes
Bake time: 20-25 minutesa
Ingredients (serves 4):
4 salmon fillets (about 6 oz each)
12 cherry tomatoes
Juice of 1/4 lemon
1 tbsp. olive oil
Fresh black Pepper
2-3 sprigs fresh thyme, plus extra to garnish
31/2 oz. sugar snap peas, slices diagonally
31/2 oz. thin green beans, trimmed
3 1/2 oz. frozen peas
2 oz. frozen fava or boad beans
1 whole leek, sliced
Easy Step-By-Step
1. Preheat oven to 375 degrees Fahrenheit . Place the salmon fillets and cherry tomatoes ion a large greased ovenproof dish. Add the lemon juice and olive oil. Add some freshly ground pepper to taste and a few sprigs of the fresh thyme.
2. Cover the dish with foil and bake until the fish has cooked through, 20-25 minutes.
3. meanwhile, bring a large saucepan of lightly salted water to a boil. Add the sugar snap peas, green beans, green peas, fava beans and leek and return to a boil. Let the vegetables simmer for 3 minutes. Drain well.
4. Arrange the vegetables on 4 serving plates. Top each with a cooked salmon fillet and some cherry tomatoes. Drizzle with any remaining juices from dish and garnish with fresh thyme.
